I would have a question regarding going from a potentiometer to Arduino controlled. Could you use an analog output with an op-amp gainer to supply the voltage that the potentiometer is giving? Use the Arduino to supply voltage between 0-5v and use a gain of 2 to have a signal from 0-10v and so 0-10 amp possibility?

Not really understand the question. If you want to amplify the voltage from arduino from 0-5V to 0+10V, yes, you can use an OPAMP such as the LM324 and amplify the votlage with a gain of 2.

In the following project, you have done the current selection is done through a potentiometer. I would like to use the Arduino to do this task. Would it be possible to do so with one of the analog outputs of the Arduino connected where the potentiometer is connected in your project?
